Rosemary Garlic Sourdough Focaccia: My Garlic Rosemary slab is a true classic - starting with fresh rosemary grown right here in Kāpiti. This is coupled with freshly sautéed garlic in olive oil that melts into the dough’s deep dimples. Finished with a generous sprinkle of flaky sea salt, this slab is a balance of aromatic herbs, mellow sweetness, and that unmistakable sourdough depth.
Chilli Oil and Sesame Sourdough Focaccia: My Chilli Oil and Sesame slab is a bold, aromatic twist on a classic—featuring a homemade chilli oil marbled directly through the dough for heat in every bite. This is coupled with a toasted blend of sunflower and sesame seeds that adds a nutty, golden crunch to the crust. Finished with a final drizzle of toasted sesame oil and a sprinkle of flaky sea salt, this slab is a perfect balance of heat and umami.
Cinnamon Sugar Glazed Sourdough Focaccia: This is the ultimate comfort bake—a sourdough take on the classic cinnamon roll. The dough is marbled throughout with a warming cinnamon-spice swirl that creates pockets of sweetness within the airy crumb. Crafting Authentic Focaccia Bread
Creating authentic focaccia is a dance between time, technique, and intuition that begins long before the oven is ever heated. Each focaccia slab is baked in Kāpiti and delivered across the Kāpiti Coast, making it perfect for easy entertaining, sharing with friends, or adding something special to your table.
The process starts with a simple yet crucial foundation – combining flour, water, sourdough starter and salt into a soft, wet dough that's deliberately kept much more hydrated than typical bread dough. This high hydration is what creates focaccia's signature open, airy crumb structure. The dough then undergoes a series of gentle folds rather than traditional kneading, allowing the gluten to develop slowly while preserving the delicate bubble structure that makes each bite so wonderfully light.
The magic truly happens during the long, slow rise of about 18 hours in the refrigerator. This extended fermentation develops complex flavours in the dough which enhance the carefully chosen and lovingly prepared toppings for a full taste explosion.
Before baking, the bubbly batter-like dough is carefully dimpled, creating the iconic wells that will hold pools of good-quality oil and toppings. Baked quickly in a scorching hot oven, it emerges golden and crisp on top, yet pillowy soft within – the perfect canvas for our range of exciting flavour combinations and a standout focaccia slab for entertaining, sharing platters, or casual gatherings.
